I wanted to create a place where people could grab a healthy meal, a quick espresso, or a savory crepe from scratch, all made with local, fresh ingredients.

For the last year I scoured Denver looking for the best location to open a small café and bakery. After hitting many road blocks, I found myself catering small soiree’s and specialty dinners as I continued to look for a place to call my own. I finally found a home on Main Street at Parker Station in the town where I was born and raised. 

The idea of a Creperie and authentically French café culminated after years of working under a professionally trained French pastry chef and traveling to Paris in December of 2012.  I stayed in Montparnasse which is the mecca of Creperie restaurants. There, I learned the difference between savory crepes and those made with sweeter accompaniments.

I wanted to create a place where people could grab a healthy meal. Or come in for a quick espresso, or a chocolate croissant, a savory crepe made from scratch, a bite of quiche, all made with local, fresh ingredients. I want everyone to feel the vibe of Paris.

Crepes were one of first dishes I learned to make since my mother was born there and lived in France for a short time. Our family participated in a Foreign exchange program which hosted French and English students over the years who have given us new recipes and have become our friends and come back to visit often.

Our dishes will be made from scratch with the freshest local ingredients. Crepes will be made to order with a choice of banana, nutella, apple, pastry cream, and other fresh berries. Our savory crepes will be offered with sausages, eggs, smoked salmon, smoked meats and other vegetables.

We will be including gluten-free options our crepes as well as in our fruit tarts, cake pops, cupcakes and croissants. We are grateful to be a part of the Parker Station family.
